By tradition, of course. A promise that the Aschwanden mountain cheese dairy has been living up to every day for over 85 years.
Incidentally, not much has changed since then. The mountain cheese is still made according to the old family recipe with fresh mountain milk, without heat treatment, traditionally processed in copper vats. Only the infrastructure of the cheese dairy has adapted to modern conditions. The Kupferkessi is much larger and is no longer heated with wood, but with electricity produced by the company's own solar panels in addition to 100% hydroelectricity from Uri.
